Grand Cuvée Vinification Notes:
After cuvée (first) whole cluster pressing, the free run juice was separated and fermented for each varietal and farm it was from in neutral French oak barrels. This gave us the best insight to create our premium blends. Added organic cane sugar and Zymaflore Spark yeast to kick off secondary fermentation in the bottle for this elegant sparkling wine. Aged sur lie (fine lees) for 42 months.
Tasting Notes:
This elegant champagne style sparkling wine brings forward crisp apple and citrus with toasty and umami notes and a long rich finish.
Food Pairing:
Pairs beautifully with risotto, quiche, teriyaki seafood, pineapple BBQ rings, creamy carbonara pasta, flan and deep-fried cheesecake.

Varietals – 80% Pinot Gris, 20% Chardonnay

Alcohol 12.7% – TA 9.2 g/L – pH 3.06
Our hand made wine process and warm disgorging can leave small amounts of lees in the bottle, leaving evidence of natural wine making.
