Grand Cuvée Vinification Notes:
After cuvée (first) whole cluster pressing, the free run juice was separated and fermented for each varietal and farm it was from in neutral French oak barrels. This gave us the best insight to create our premium blends. Added organic cane sugar and Zymaflore Spark yeast to kick off secondary fermentation in the bottle for this elegant sparkling wine. Aged sur lie (fine lees) for 42 months.
Tasting Notes:
This champagne style sparkling wine has notes of dark fruit, wild strawberry and cherry pie with a toasty and savory finish.
Food Pairing:
Pairs great with sushi, veggie bowls, hearty pasta, seafood, prosciutto, charcuterie meats, figs and cheese.
