2021 Sparkling Pinot Noir
Sparkling Taille Vinification Notes:
The Pinot Noir grapes are from Saanich Peninsula vineyards with 30 year old vines. After whole cluster pressing, this wine was fermented in neutral French oak barrels. Added organic cane sugar and VR44 yeast to kick off secondary fermentation in the bottle for this aromatic sparkling wine. Aged sur lie (fine lees) for 15 months. Disgorged and a traditional French dosage added at 10 g/l.
Tasting Notes:
This aromatic style sparkling wine has pink floral, raspberry, strawberry jam with a creamy finish.
Food Pairing:
This wine is great on its own and it pairs well with salmon, pasta, pizza and anytime.
