2018 Sparkling Brut – Rosé


2018 is sold out. Watch for our 2019 Sparkling Brut Rosé to be released late Summer of 2020!

Sparkling Brut Vinification Notes:

After taille (second) whole cluster pressing, the wine was separated and fermented for each varietal and farm it was from. This gave us the best insight to create our fruit forward blends. Aged in stainless steel tanks and some neutral barrels until bottled. Added organic cane sugar and VR44 yeast to kick off secondary fermentation in the bottle for this aromatic sparkling wine. Aged sur lie (fine lees) for 10-14 months.

Tasting Notes:

Bright fruit and incredibly fresh acidity highlight the notes of strawberry, cranberry and raspberry.

Food Pairing:

This wine pairs great with fish, prawns, duck, charcuterie meats and red fruits.

Varietals – 79% Pinot Noir, 21% Marechal Foch

Harvested – September 15th – October 6th, 2018

Alcohol – 12.5% – TA 9.4 g/L – pH 2.97

Our hand made wine process and warm disgorging can leave small amounts of lees in the bottle, leaving evidence of natural wine making.
